Craig Hart has put together 35 exercises for prose writers, but often I find similar exercises inspire poetry in a similar fashion. The book is arranged into sections, including: Character, Plot, Point of View, Dialogue, and Description and Setting. For example, the first prompt for Gullible Character will work great for both prose or poetry:

“Write up to 500 words beginning and ending with this character statement sentence: ‘She believed everything she was ever told.'”
